Forest Raised Mushrooms: Available Seasonally
Our Forest Raised mushrooms are grown on natural hardwood logs and natural beds in the woodlands of our farm, where they fruit according to the cues of weather, moisture, and seasonal change. Rather than forcing production, we allow the forest to set the pace — creating a cultivation system that reflects both ecological respect and agricultural intention. Available seasonally.
Comb Tooth (Hericium Coralloides) Description: With cascading, coral-like branches and a delicate sweetness, comb tooth offers a tender texture and elegant appearance that elevates simple preparations.
Maitake (Grifola Frondosa) Description: Also known as “hen of the woods,” maitake forms layered, ruffled clusters with a rich, savory depth and tender texture that crisps beautifully when roasted.
Reishi (Ganoderma Lucidum) Description: Recognizable by its lacquered, deep amber surface and sculptural form, reishi has been valued across cultures for centuries and is traditionally prepared as a slow-simmered tea or extract.
Shiitake (Lentinula Edodes) Description: Grown on hardwood logs, our shiitake varieties range from thick, meaty donko-style caps to more open, delicately textured forms — each offering a deep umami richness and satisfying bite.
Turkey Tail (Trametes Versicolor) Description: Named for its striking, banded pattern reminiscent of a wild turkey’s tail, this thin, woody mushroom is traditionally dried and brewed, appreciated for its layered earthiness and visual beauty.
Wine Cap (Stropharia Rugosoannulata) Description: Cultivated in outdoor wood-chip beds, wine cap develops a dense, hearty texture and gently earthy flavor, bringing the richness of the garden floor to the plate.
